Cheesy Garlic Bread

1 baguette
1 stick of butter
1-2 tablespoons fresh garlic
8 ounces fresh mozzarella
2 tablespoons fresh parsley

Preheat the oven to 350. Cut the baguette in half lengthwise. In a bowl, melt butter, then combine with garlic; season with salt and pepper. Pour garlic mixture over bread, and bake 10 min. Remove bread from oven, then top with fresh mozzarella. Place bread back in oven, and broil on high for 2-3 minutes or until cheese is fully melted (slightly longer if you prefer to toast the cheese a bit). Remove and slice into two-inch pieces. Top with fresh parsley and serve.
