Crispy Cajun Chicken Wings

Ingredients:
12 chicken wings
1 1/2 cups buttermilk
3/4 cup flour
1-2 tablespoons Cajun seasoning (available in the spice aisle)
1 1/2 cups vegetable oil

Directions:
In a large bowl, soak chicken wings in buttermilk (season buttermilk generously with salt and pepper) for 1 hour at room temperature. In a plastic bag or medium bowl, add flour and Cajun seasoning. Season generously with additional salt and pepper. Heat vegetable oil in a pan on medium heat until oil is glossy and hot (325 degrees, if you have a thermometer), about 3 minutes. Coat chicken wings in flour mixture, then fry until golden brown and cooked through, about 2-3 minutes on each side or until internal temperature reaches 165. Pair with blue cheese or ranch dressing and serve.
