1 box pasta (cavatappi, rotini, or pasta of choice)
6 tablespoons butter
1 1/2 cups heavy cream
2 cups sharp cheddar, grated
2 cups gruyere, grated
Preheat oven to 350. Cook pasta according to package instructions. In a medium pot, heat butter on low until melted. Add heavy cream and heat on medium low, about 3-5 minutes. Add 1 cup each of cheddar and gruyere; whisk until fully combined. Remove pasta from heat, and place in a 9×13 baking dish or another oven-safe dish. Top with remaining cheese, then bake until cheese is fully melted and begins to brown, about 20 minutes.
If you have it: Swap remaining cheese for toasted breadcrumbs. Combine 1 cup breadcrumbs with 1/2 stick melted butter; season with salt and pepper, then spread evenly over pasta and bake.
