Low-Carb Egg Muffins

Ingredients:
3 large or jumbo eggs
1/4 cup fresh spinach, chopped
2 slices Canadian bacon, chopped
1/4 cup shredded cheddar

Directions:
Preheat oven to 350. In a bowl, whisk eggs together. Add spinach, bacon, and cheddar to bowl and combine. Pour mixture into a non-stick or greased muffin tin (makes 6 muffins). Bake 20 minutes or until eggs are not runny.
