
Ingredients:
2 cloves garlic
1 pound fresh zucchini squash noodles (you can find them pre-made in the produce section of the grocery store)
1/4 cup olive oil, plus more for sautéing garlic
1/2 tablespoon lemon juice
1/2 cup grated Parmesan
Directions:
Add a splash of olive oil to a large pan and heat on low for 1 minute. Add garlic, and sauté on low, 1-2 minutes. Add zoodles and turn heat to medium; sauté 7-10 minutes. Season with salt and pepper. Add remaining olive oil, plus lemon juice, and toss to coat zoodles, allowing them to heat an additional 1-2 minutes. Add Parmesan and stir until melted. Remove, and top with additional Parmesan for garnish (optional).
