1/3 cup olive oil
2 tablespoons fresh cilantro, plus more for garnish
2 tablespoons lime juice
1 garlic clove, minced
2 chicken breasts, boneless and skinless
Combine oil, cilantro, lime juice, and garlic in a bowl. Season with salt and pepper. Add chicken to a dish or plastic bag, and pour marinade over chicken, making sure to coat both pieces. Refrigerate 1-4 hours.
Preheat oven to 350. Cook chicken about 45 minutes or until internal temperature reaches 165 degrees.
