
Ingredients:
2-3 chicken breasts
8 small corn tortillas
1/2 cup sweet onion, chopped
1/2 cup Cotija, crumbled
1/2 cup chipotle mayonnaise
Directions:
Season chicken with salt and pepper. In a large pan, cook chicken on medium heat for about 10 minutes. Then, flip chicken, cover with a lid, and cook an additional 10 minutes. (Make sure internal temperature of chicken reaches 165 degrees; thickness of the chicken breast can alter cooking times.) Meanwhile, toast tortillas in a small pan or over a low direct flame until they begin to brown, about 30-60 seconds on each side.
Once chicken is cooked, let it rest 5 minutes, then shred it with two forks, and fill tortillas with chicken, onion, Cotija, and chipotle mayonnaise.
