1 strip steak
8 small corn tortillas
1/2 cup salsa verde
1/2 cup sweet onion, chopped
1/2 cup fresh cilantro, chopped
Season steak generously with salt and pepper. Cook steak in a grill pan on medium-high heat with a splash of olive oil or cooking spray until medium rare, about 2-3 minutes on each side. Remove steak, let it rest for 5 minutes, and slice it thinly. Then, toast tortillas in a small pan or over a low direct flame until they begin to brown, about 30-60 seconds on each side. Fill tortillas with steak, salsa, onion, and cilantro.
