8 small corn tortillas
2 avocados, sliced
1/2 cup black beans, strained
1/2 cup Cotija
1/4 cup fresh pico de gallo or salsa
Toast tortillas in a small pan or over a low direct flame until they begin to brown, about 30-60 seconds on each side. Fill tortillas with avocado, beans, Cotija, and pico de gallo or salsa. Season with salt and pepper.
