8 ounces quinoa
1/3 cup cucumber, chopped
1/3 cup feta
1/3 cup roasted red peppers, chopped
2-3 tablespoons store-bought lemon vinaigrette dressing
Directions:
Cook quinoa according to package instructions. In a large bowl, combine quinoa, cucumber, feta, and peppers. Toss with vinaigrette.
