1/2 cup sweet onion, chopped
1 garlic clove
3 cups low-sodium chicken broth
1 cup fresh spinach
5 ounces (about 1 1/2 cups) cheese tortellini (preferably from fresh pasta section of grocery store)
Sauté onion on medium-low about 5 minutes. Peel garlic and smash to release flavors; combine with onion about 1 minute. Add chicken broth, and season with salt and pepper to taste; let simmer 10 minutes. Add spinach, then tortellini, then let simmer an additional 10 minutes.
