6-8 ounces sweet onion, sliced
1/2 tablespoon sugar
8 ounces pizza dough
2 tablespoons fig jam (typically available near specialty cheeses in the grocery store)
3 ounces goat cheese
Remove dough from refrigerator at least 30 minutes prior to cooking. In a pan, add a splash of oil or cooking spray, sliced onions, and sugar. Allow onions to caramelize on medium-low heat, about 20 minutes. Preheat oven to 450. Roll out dough evenly to desired thickness. Top dough with fig spread and caramelized onions. Bake 12-15 minutes. Remove from oven and top with goat cheese. Bake an additional 5-8 minutes.
