Asian-Inspired Chicken and Rice

1 pound frozen broccoli
2 packages quick-cook brown rice (such as Uncle Ben’s)
4 chicken cutlets, cut into one-inch pieces
1/3 cup Asian-style BBQ sauce (we used Taste of Inspirations)

Cook broccoli and rice according to package instructions. In a pan, Combine chicken with a splash of olive oil or cooking spray. Cook on medium-low 7-10 minutes, or until chicken is cooked through. With about one minute remaining, add sauce to chicken and toss to coat.

In 4 bowls, add rice, broccoli, and chicken in sauce.
