Chicken Cordon Bleu

4 tablespoons olive oil
4 chicken breast cutlets
4 slices ham
4 thin slices Swiss cheese
1/4 cup Italian-style breadcrumbs

Preheat oven to 350. In an oven-safe dish, add two tablespoons of olive oil, or enough to just coat the bottom of the dish. Pound chicken breast cutlets with a meat tenderizer until they’re no more than 1/4-inch thick. Then, top one end of chicken with ham and cheese, and roll chicken up. Coat all sides in breadcrumbs, then add to the dish with olive oil. Drizzle remaining olive oil over the top of each piece, then bake 30 minutes or until chicken is cooked through (165 degrees Fahrenheit).
