Tangy Lemon Chicken

1/3 cup chicken broth
4 tablespoons (1/2 stick) butter, softened
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley
4 chicken cutlets

Preheat oven to 350. Add chicken broth to the bottom of an oven-safe dish. In a small bowl, combine butter, lemon juice, and parsley, and mix together. Add chicken to dish, season each piece generously with salt and pepper, and spread butter mixture evenly over top of each piece. Bake 20-25 minutes or until chicken is cooked through (165 degrees Fahrenheit).
