1/4 cup soy sauce
1/4 cup fresh lime juice
1 tablespoon packed brown sugar
1 1/2 tablespoons jerk seasoning
4 chicken thighs
Combine soy sauce, lime juice, brown sugar, and jerk seasoning in a bowl. Add chicken thighs to a plastic bag and pour marinade over chicken thighs. Seal bag and make sure chicken is well-coated; refrigerate at least 30 min (for deeper flavor, refrigerate several hours).
Preheat oven to 350. Remove chicken from bag and place in an oven safe dish. Bake 45 minutes or until internal temperature is 165.
