1 pound fresh strawberries, finely chopped
1 1/4 tablespoons sugar (optional)
4 tablespoons butter
1/4 cup cream cheese
4 slices hearty white bread
In a large pan, add strawberries and a splash of water, plus sugar (omitting sugar will give a milder sweetness; we recommend adding sugar for a sweeter flavor). Cook over medium heat about 15 minutes, until the mixture reduces and thickens similarly to syrup; remove from pan and set aside. Wipe down pan and melt butter on medium-low heat.
In a shallow bowl (wide enough to fit a slice of bread), add eggs plus a splash of water or milk. In a separate bowl, combine cream cheese plus 1/3 of the strawberry mixture. Add strawberries & cream cheese mixture between two slices of bread. Dip bread in egg wash, then add to pan and cook 2-3 minutes on each side. Top with remaining strawberry compote.
