Chicken Salad

1 package chicken tenderloins, plus oil or cooking spray
1/4 cup mayonnaise
1 teaspoon Dijon
Squeeze of fresh lemon juice
Salt & pepper, to taste
1/2 cup red grapes, sliced

Add oil or cooking spray to a medium pan on medium heat. Add chicken, then put a lid over pan and cook chicken about 3-4 minutes. Flip chicken and cook an additional 3-4 minutes, lid on. Remove from pan, making sure chicken is at least 165 Fahrenheit, and let cool 15 minutes. Then, chop chicken.

Meanwhile, in a small bowl, combine mayonnaise, Dijon, and a squeeze of lemon juice. Season with salt and pepper. Set aside.

In a medium bowl, add chicken, mayonnaise mixture, and grapes; toss to combine.
