(For a crowd, double the recipe)
6-8 small potatoes (such as mini gold or red)
1/4 cup mayonnaise
1 tablespoon white vinegar
1/2 teaspoon Dijon
1/4 cup red onion, chopped
Salt & pepper, to taste
Start with a large pot of boiling water. Season water generously with salt. Add potatoes, then bring water to a simmer and cook 12-16 minutes or until fork tender. Meanwhile, combine mayonnaise, vinegar, Dijon, and onion in a large bowl, and season with salt and pepper. Set aside.
Remove potatoes from water and add them to a bowl of ice water to stop the cooking. Then, roughly chop them, and combine them with mayonnaise mixture. Serve cold.
