Spinach & Feta Egg Muffins

Ingredients: Makes 4 muffins
1 cup loosely packed spinach, plus oil for wilting
2-3 slices bacon
3 eggs, plus a splash of milk
1/4 cup feta

Preheat oven to 350. In a small pan, add spinach plus a splash of oil, and heat on low 2 minutes or until just wilted. Remove spinach and cook bacon in the same pan until crisp. Remove bacon and chop.

In a bowl, combine eggs and a splash of milk and whisk until combined. Add spinach, bacon, and feta and mix. Add egg mixture to muffin tin. Bake 15 minutes, then cool three minutes and serve.
