Fresh salsa

14 ounces (1 can) diced fire roasted tomatoes
1/2 jalapeño, roughly chopped (add more or less, depending on preferred spice)
1/4 cup sweet onion, finely chopped
1 tablespoon cilantro
Juice of half a lime
Salt and pepper

In a food processor, combine tomatoes, jalapeño, cilantro, and lime juice. Season generously with salt and pepper. Pulse 5 times (or process consistently for 5 seconds for a smoother texture).
