Steak Tostada

Ingredients:
1 pound steak (we used top round to cut costs, but this can be changed to preference)
Salt and pepper
2 tortillas (6-8 inches in diameter), plus oil for frying
1/4 cup sweet onion, chopped
2 tablespoons fresh cilantro, chopped
1/4 cup chipotle crema (usually found in condiment aisle of grocery store)

Directions:
In a medium pan, heat a splash of oil on medium heat. Add steak and season generously with salt and pepper. Cook steak, turning halfway through, about 3 minutes per side or until medium-rare. Remove steak and let rest 5 minutes, then slice thinly.

In the same pan, heat about 1/4 cup oil, or just enough to fully coat the bottom of the pan. Add tortillas, one at a time, and fry about 1 minute per side. Remove tortillas and top with steak, onions, chipotle crema, and cilantro.
