2/3 pound 80-85% lean ground beef, plus oil for cooking
4 slices bacon
1/4 cup blue cheese
1/4 cup sweet onion, sliced or chopped
4 slider buns
Season beef generously with salt and pepper. Shape beef into 4 patties and set aside.
In a medium pan, add onions and a splash of oil and cook on medium-low about 10 minutes or until onions begin to caramelize. Remove onions from pan and set aside.
Add another splash of oil to the pan, and cook patties on medium heat, 2-3 minutes per side or until desired temperature. Let patties rest 2-3 minutes. Meanwhile, add bacon to pan and cook to desired crispness. Top slider buns with patties, blue cheese, bacon, and onions.
