4 Italian-style pork sausages
1 bell pepper, plus oil for sautéing
1/4 cup sweet onion, sliced
4 slices provolone or mozzarella
4 slider buns
Preheat the oven to 400. Cook sausages 25 minutes or until at least 160 degrees.
Meanwhile, slice bell pepper and onion. In a pan, add peppers, onions, and a splash of oil. Heat peppers and onions on medium-low 10 minutes, tossing occasionally to make sure vegetables don’t burn.
Remove sausage from oven. Slice sausages in half vertically, then in half horizontally (without fully cutting through the skin) so they lay flat. Place two flat sausage halves together (there should be eight halves total; two each creates four sliders) and top with cheese. Broil 2 minutes or until cheese is fully melted. Add sausage and cheese to slider buns, and top with peppers and onions.
