2 thin chicken breasts, plus oil for frying
1/2 cup flour
Salt and pepper
1/4 cup chipotle mayo
4 slider buns
Let chicken sit out 30 minutes before cooking. Slice chicken breasts in half for four pieces total, and set aside.
Add flour to a bowl and season generously with salt and pepper. Add oil to a small pan—enough to coat the bottom of the pan with a 1/4-inch layer. Dredge chicken in flour, then add chicken to pan and fry 2-3 minutes per side or until internal temperature reaches 165. Remove chicken from oil and let rest 5 minutes.
Top slider buns with chicken, pickle chips, and chipotle mayo, and serve.
