2 servings penne pasta (about 1 1/2 cups)
3 cups fresh spinach, plus olive oil for sauteing
Salt and pepper
1/2 cup heavy cream
3 tablespoons butter
1/4 cup freshly grated Parmesan
Cook pasta according to package instructions. In a medium pan, add a splash of oil and spinach. Season spinach with salt and pepper, and sauté 5 minutes on low or until spinach is fully wilted. Then, add butter, and melt fully before adding cream. Let cream heat 3-5 minutes on low. Then, whisk in Parmesan. Add pasta to sauce, toss, and serve.
