1 cup heavy cream
1/2 cup white sugar
1 cup mascarpone
Optional chocolate shavings
1 package ladyfingers
1 cup Espresso

Add heavy cream and 1/4 cup sugar to a food processor and process 15-30 seconds or until fully whipped and fluffy. Add whipped cream to a large bowl and combine with mascarpone, plus remaining white sugar and mix until fully combined.

Add shaved chocolate to the bottom of a loaf pan (this step is optional). Set aside. Add espresso to a small bowl. Dip lady fingers fully in espresso, then place them at the bottom of the pan in an even layer. Then, add whipped cream mixture and fully cover the ladyfingers. Repeat with a second layer of espresso ladyfingers, then another layer of whipped cream. Top with optional chocolate shavings. Refrigerate two hours before serving.
