Coconut Shrimp

Ingredients:
2 eggs
1/3 cup flour
Salt and pepper
1/4 cup panko
1/2 cup sweetened shredded coconut
Oil, for frying (if you don’t have oil, you can bake the shrimp at 425 for 10 minutes)
10-12 thawed shrimp, peeled and de-veined

Directions:
Add eggs to small bowl and beat. Add flour to a separate small bowl, and season generously with salt and pepper. In a third bowl, add panko and coconut, and mix to combine.

Add enough oil to a medium pan to coat the bottom, and heat on medium. Dip shrimp in flour, then in egg wash, then panko. Add shrimp to pan and cook 2 minutes per side, or until shrimp are golden brown. Let cool 2 minutes before serving.
