Pineapple Mango Fish Tacos

Ingredients:
2 frozen cod fillets, plus oil for cooking
2 corn tortillas
1 avocado, pitted and chopped
2 tablespoons mango salsa
2 teaspoons cilantro lime mayo, such as Hellman’s

Directions:
Add oil to a medium pan, and cook fish on medium-high heat 2-3 minutes per side. Remove pan from heat, wipe the pan, and add another splash of oil. Return pan to heat, then toast tortillas, one at a time, until golden brown.

Fill tortillas with fish, avocado, mango salsa, and cilantro lime mayo. Serve immediately.
