
Ingredients:
4 slices bacon
Ciabatta bread, plus butter or mayo for toasting (you can also use oil or cooking spray)
6 ounces brie
1/2 cup blueberries, plus a splash of water
1 teaspoon white sugar
Directions:
In a medium pan, cook bacon on medium heat until desired crispness; set aside. Wipe out the pan, then add blueberries and a splash of water, plus sugar. Heat on low 5 minutes, stirring frequently to make sure blueberries don’t burn. When blueberries are soft, mash them with a fork to create the sauce.
Heat brie in a warm oven about 5 minutes or just until it’s soft enough to scoop out of the rind; it should not be fully melted. Top ciabatta bread with brie, blueberry sauce, and bacon. Toast each side on medium-low heat until crisp and cheese is fully melted (about 5 minutes for the first side and 3 minutes for the second).
