Black Bean Burger

Ingredients: For Burger Patties Only
1 cup black beans, rinsed
1/4 cup panko breadcrumbs
1 egg, lightly beaten
2 tablespoons fresh cilantro
1/4 cup chopped sweet onion
Salt and pepper, to taste

Directions:
Combine all ingredients in a food processor. Shape into patties, then freeze 20 minutes to firm up the patties. In a grill pan, heat a splash of oil on medium-low. Add patties and cook 3-4 minutes per side. Remove from heat and add to a burger bun with your favorite toppings, such as avocado and chipotle mayo.
