Double Decker Cuban Sandwich Melt

Ingredients:
12-ounce pork tenderloin
8 ounces thick-sliced ham (about 3-4 slices)
8 ounces thinly sliced Swiss cheese
Spicy pickles
12 slices hearty white bread or Cuban bread (plus butter, mayo, or oil for toasting)

Directions:
Preheat the oven to 375. Cook pork tenderloin 20 minutes or until internal temperature is 145. (Leave oven on when pork is done.) Let pork rest 5 minutes, then slice thinly. Layer pork, ham, Swiss, then pickles on sourdough bread. Top with another piece of bread, then repeat the same order for the second tier. Repeat for all sandwiches.

Toast sandwiches in a cast iron pan on low to desired crispness. Once bread is golden brown, Place sandwiches in the oven and cook an additional 10 minutes or until cheese is fully melted.
