Italian-Style Rolled Eggplant

1 small- to medium-sized eggplant
4 ounces cream cheese
1 tablespoon freshly chopped basil
1/4 cup chopped sweet onion
Salt and pepper
1/2 cup Italian-style breadcrumbs
A splash of oil, for cooking

Preheat the oven to 350. Peel eggplant and thinly slice lengthwise. (Slices should be no thicker than 1/4-inch). In a bowl, combine cream cheese, basil, and sweet onion. Season mixture with salt and pepper.  Spread mixture in a thin layer evenly over one side of each eggplant slice. Dip the other side in breadcrumbs, then roll the eggplant up. Drizzle a splash of oil over each eggplant roll-up, then bake 20-30 minutes.

Five-Ingredient Tip: We suggest serving this with red sauce for even more flavor.
