Shrimp Stuffed Bell Peppers

1 bell pepper
1/4 cup chopped yellow onion
6-8 uncooked shrimp, chopped
1 chipotle pepper in adobo, chopped
2-3 tablespoons queso fresco
Salt and pepper

Preheat the oven to 350. Slice bell pepper in half lengthwise; hollow out seeds and white membrane, and set aside. In a bowl, combine onion, shrimp, chipotle pepper, and queso fresco. Season with salt and pepper. Scoop mixture into pepper halves. Add peppers to an oven safe dish with a few tablespoons of water in the bottom of the dish. Bake 20-25 minutes or until peppers are softened and shrimp are cooked through.
