2 servings orzo
1 medium piece salmon
1 tablespoon parsley
2 tablespoons feta
2-3 tablespoons lemon vinaigrette
Salt and pepper
Preheat oven to 425. Cook orzo according to package instructions. Meanwhile, cook salmon in oven 12-15 minutes or until internal temperature reaches 135 Fahrenheit. Then, drain and rinse orzo.
In a large bowl, combine orzo, parsley, feta, and vinaigrette. Season with salt and pepper. Add salmon in chunks, then toss once more.
