Cheesy Taco Crunch Wrap

Olive oil, for cooking
1/3 cup sweet onion, finely chopped
1/2 pound ground beef
1 tablespoon taco seasoning
1 cup shredded cheddar
2 flour tortillas

In a medium pan on medium-low heat, add a splash of oil, plus sweet onion. Cook 4 minutes. Then, add ground beef. Season with taco seasoning and salt, and cook until no pink remains, about 5-7 minutes.
Add 1/4 cup cheese to each flour tortilla. Spread taco meat evenly between two tortillas, then top each with remaining 1/4 cup cheese. Fold in sides of tortilla, then roll to create a wrap.
Add a splash of olive oil to the pan that held the taco meat (feel free to rinse/wipe down the pan first). Add tortillas, and cook on low until each side is golden brown, about 2-4 minutes per side. Slice in half, and serve.
