1/3 cup sweet onion, chopped, plus oil for cooking
1/3 pound ground beef (preferably at least 80/20)
Salt and pepper
3/4 cup shredded cheddar
1 flour tortilla
In a small pan, add sweet onion and a splash of oil, and sauté 2-3 minutes on medium-low. Then, add ground beef to pan, and cook about 3-5 minutes, or until meat is fully browned. (Season meat with salt and pepper.)
Add beef and onion mixture, plus cheddar, to one side of a large flour tortilla. (To make the quesadilla similar to a bacon cheeseburger, add two optional slices of bacon.) Fold the other side of the tortilla over to create the quesadilla. Then, in a large pan, add a splash of oil, and toast the tortilla on medium heat for 3-4 minutes per side.
