2 tablespoons butter
1 small garlic clove, minced
Optional white wine
1 cup four-cheese Italian shredded cheese
6-8 large, cooked shrimp
1 flour tortilla, plus oil for cooking
In a small pan, combine butter and garlic. (Add a splash of white wine, if desired.) Sauté 2-3 minutes on low. Then, on one side of a large flour tortilla, add half of cheese, shrimp, plus butter and garlic mixture, then remaining cheese. Fold the other side of the tortilla over to create the quesadilla. Then, in a large pan, add a splash of oil, and toast the tortilla on medium heat for 3-4 minutes per side.
