Capresadilla

Ingredients:
1 cup shredded mozzarella
1-2 basil leaves, sliced or torn
1/4 chopped tomatoes
1 flour tortilla
Optional chicken

Directions:
Add mozzarella, basil, and tomatoes to one side of a flour tortilla. (Add optional chicken, if using.) Fold the other side of the tortilla over to create the quesadilla. Then, in a large pan, add a splash of oil, and toast the tortilla on medium heat for 3-4 minutes per side.
