2 cups packed fresh spinach
1/4 cup chopped sweet onion
1 hot cherry pepper, chopped (use half for more mild spice)
2 tablespoons freshly grated Parmesan
2 frozen cod fillets, completely defrosted
Olive oil, for sautéing
Preheat oven to 425. If your fillets are small and thick, cut a slit in the side for the stuffing. If they are long and thin, you will be rolling the stuffing inside the fillet. Add spinach, onion, cherry pepper, and olive oil to a small pan, and sauté on medium-low for about 5 minutes. Then, add in the parmesan until it melts. Fill the fillets with stuffing, and bake 15-20 minutes or until fish flakes easily with a fork.
