2-3 large basil leaves, chopped
2 tablespoons mayonnaise
Salt & pepper to taste
2 slices ciabatta bread
4 ounces chicken, cooked and sliced
3 tomato slices
Olive oil, for toasting
In a food processor, combine chopped basil, mayonnaise, and salt and pepper, and pulse 3-5 seconds. Then, spread 1 tablespoon of mixture on each slice of bread. Top sandwich with chicken and tomatoes.
Add a splash of olive oil to a grill pan and heat 1 minute on medium-low. Add sandwich to grill pan, and toast 2-4 minutes per side. (Note: You might need to add more oil upon flipping the sandwich.) Cut diagonally and serve.
