Spinach and Artichoke Pasta

2 servings pasta of choice
1 cup packed fresh spinach, plus oil for sautéing (for richer flavor, sauté spinach in butter)
2/3 cup chopped canned artichoke hearts (not marinated artichokes)
2/3 cup heavy cream
1/4 cup Freshly grated Parmesan

Cook pasta according to package instructions. Meanwhile, Sauté spinach in oil or butter on low, 2-3 minutes or until it just starts to wilt. Add artichokes and heavy cream, and heat until simmering. Add Parmesan, then turn heat on low and let sauce thicken. Toss with pasta and serve.

Five-Ingredient Tip: If the sauce is too thin, add a bit of flour and whisk to thicken it right up.
