Bacon and Beer Mac & Cheese

Ingredients:
4 servings rigatoni or pasta of choice
1/2 cup heavy cream
8 ounces Gouda cheese, grated
1/4 cup beer of choice
Salt and pepper to taste
8 slices bacon, cooked and chopped

Directions:
Cook pasta according to package instructions. In a large pan, heat heavy cream on medium-low for 2-3 minutes. Slowly add Gouda in increments, whisking until fully melted. Then, whisk in beer until combined. Let simmer on low 10 minutes. Add chopped bacon, reserving about 2-3 tablespoons for topping. Toss pasta with cheese sauce, then plate and top with remaining bacon
