Beer-Battered Crispy Cod

6-8 pieces cod
1 cup flour
1 cup beer of choice
1 egg, beaten
Salt and pepper
Canola or vegetable oil

Let cod rest outside of refrigerator for 30 minutes. In a bowl, combine flour, beer, and egg, then season batter with salt and pepper. (Make sure there are no flour lumps in the batter.)
Cover the bottom of a deep pan with about 2 inches of oil. Bring oil to 350 on medium heat. Dip fish in batter, then fry in oil 4-6 minutes per side or until fish is cooked to 140. Let cool on a cooling rack 5 minutes.
