Cheddar Beer Cheese Dip

Ingredients:
1/4 cup chopped white onion, plus oil for sautéing
1/2 cup heavy cream
8 ounces sharp white cheddar cheese, grated
1/4 cup beer of choice
Salt and pepper to taste
1/2 teaspoon Worcestershire

Directions:
In a large pan, add onion plus a splash of oil, and heat on medium-low 5 minutes. Then, add heavy cream, and heat 2 minutes. Add grated cheese in increments, whisking to fully melt. Then, add beer, and whisk until combined. Let simmer on low heat 10 minutes. Season with salt and pepper as desired. After 10 minutes, add Worcestershire, and remove beer cheese from heat. Let sit 3-5 minutes to thicken, then serve.
