3 pieces sweet Italian sausage
4 servings pasta (about half a box)
1/2 cup onion, chopped, plus oil for sautéing
4 cups fresh spinach
1 cup store-bought Alfredo sauce
Optional crushed red pepper flakes, for spice
Preheat the oven to 400. Cook sausage 30-35 minutes or until internal temperature reaches 160. Let sausages rest, then slice thinly. Meanwhile, cook pasta according to package instructions.
In a large pan, add onions and sauté in a bit of olive oil on low, 3 minutes. Then, add spinach and cook until fully wilted. Add Alfredo sauce, and heat on low about 10 minutes. Season with crushed red pepper, if desired. Add pasta and sausage, then heat 3-5 minutes to let flavors combine.
