Hearty Beef Chili

1 small sweet onion, chopped, plus oil for sautéing
1 pound ground beef (80-85% lean, for the most flavor)
2-3 teaspoons chili seasoning
Salt and pepper, to taste
1 cup dark or red kidney beans
1 cup crushed tomatoes

Heat chopped onion and a splash of oil on medium-low, 2-3 minutes. Then, add beef, and season with chili seasoning, plus salt and pepper. Cook 5-7 minutes or until beef is almost fully browned. Then, add beans and crushed tomatoes, and let simmer on low for 10 minutes. Turn off heat, then let chili rest 5 minutes before serving
