Sun Dried Tomato Stuffed Chicken

1 cup tomato sauce
6 ounces cream cheese
1/4 cup shaved Parmesan
1 1/2 tablespoons sundried tomatoes, chopped
salt & pepper to taste
4 slices of thin breast
Optional: 1/4 cup breadcrumbs


In a bowl, combine cream cheese, Parmesan, and sundried tomatoes; season with salt and pepper. Slice chicken breast in half, and stuff with cream cheese mixture. (Optional: Coat chicken in bread crumbs for added flavor, though this is not necessary.) Add tomato sauce to an oven-safe dish, along with stuffed chicken, and bake 30-35 minutes or until chicken and stuffing reach 165 degrees.
