2/3 cup chipotle mayo
4 cups chicken, cooked and shredded
1 cup Ro-Tel canned tomatoes with green chiles
1 1/2 cups shredded cheddar (or pepper Jack, for added spice)
Evenly spread chipotle mayo, chicken, tomatoes, and cheese over two tortillas. Roll each tortilla up, then cover them with plastic wrap and refrigerate 20 minutes. Remove from refrigerator and cut into 1-inch-thick slices.
