Spicy Avocado Pinwheels

Ingredients:
2 tortillas
2 avocados, sliced or mashed
2 tablespoons chopped fresh cilantro
1 Jalapeño, sliced (use less for a milder spice)
1 cup Cotija cheese

Directions:
Spread avocado, cilantro, jalapeño, and Cotija evenly over two tortillas. Roll each tortilla up, then cover them with plastic wrap and refrigerate 20 minutes. Remove from refrigerator and cut into 1-inch-thick slices.
